Preparation Steps
First of all setup your grill and preheat the grates for 2 to 3 minutes. Seasoning the grates with just a little bit of oil, will improve the grilling result and also make cleaning afterwards much easier. While the grill is preheating, it’s time to start preparing the vegetables.
Basically most of the vegetables just ask for some oil, salt and pepper, what will already do the trick. Taken zucchini or eggplant as an example, cut it in slices of about half an inch thick. Brush or spray the slices with a thin layer of olive oil. A 1st pressing or extra-virgin oil will give it just that extra touch of flavor. Salt and pepper the slices according taste and preference, and you’re ready to start grilling.
Some vegetables can be easily cut in slices, for some that’s more difficult. In such case you can also just cut the vegetable in smaller pieces, also called coarsely chopped. This is also a perfect way to combine several vegetables, for example; cauliflower, sweet onion, bell peppers and mushrooms. After cutting the vegetables in pieces, follow the same steps of putting olive oil, salt and pepper over it, what works best in a bowl in this case.
